This month our facilities are featuring the Lentil. Lentils are a type of legume, but unlike most, lentils are quick-cooking and do not have to be soaked ahead of time. They come in many colors — although the most common ones are green or brown, you can also find ones that are pink-orange, yellow, and black. They are high in protein, and can be used to create soups, stews, side dishes, and are even delicious as an addition to salads.
